Counting down the days to Southeast Asia!

So I'm finally getting close enough to my departure date that I have to start mentally planning for my trip. With all the chaos of school and work, I've barely had the time to let it all settle in. As far as planning the trip, all I know is that we're arriving late at night in Bangkok, Thailand on the 21st. Not much has been planned as far as accommodations. We've scoped out a few places, but have had a hard time picking a place to settle with. As the date gets closer I'm sure we will find a place to go with. So far on the itinerary for me: the Islands (Koh Phi Phi, Koh Chang, Koh Samui, Krabi (possibly) ), up north to Chiang Mai, Siem Reap in Cambodia, Vientiane in Laos. We'll see how much we actually get to see - right now our itinerary is looking pretty ambitious. Of course, in between all the island hopping and trekking I'll be working up a big appetite for Thai and Southeast Asian cuisine and all the glory it has to offer. This is where this blog comes into play. For anyone that knows me well, knows that I have a penchant for world cuisine. I will be blogging about all the tiny stalls, fan-boasting shacks and fine dining restaurants we visit. I'll be scouting everything from cheap one dollar meals to exquisite five course meals. Hopefully by the end of this blog, I will have created my own culinary travel experience.
